1 tbsp Olive Oil
1 tbsp Garlic, minced
½ cup Sundried Tomatoes
1 Lemon, juiced
10 oz Canned Tuna
Salt, to taste
2 cups Whole Wheat Pasta, cooked to instructions
2 cups Fresh Spinach

On a medium to high heat, heat the oil in a non-stick frying pan. Heat the garlic for 30 seconds, until fragrant.

Add the sun-dried tomatoes and lemon juice to the pan. Cook for a further 1-2 minutes, until fragrant.

Next, add tuna, salt & pepper and mix until combined.

Finally, add pasta and spinach. Cook until spinach starts to wilt.

Place in a bowl and serve immediately.
