Quick and Easy Chicken Tacos

Easy, healthy and delicious!! These chicken tacos make the perfect lunch or dinner...go on give it a go!

 6 Boneless, skinless, chicken thigh fillets
 Mini tortilla wraps
 2 little gem lettuces – rinsed and ready to serve
 1 ripe avocado (optional)
 Sour cream/reduced fat crème fraiche to serve (optional)
 Any other toppings of your choice

Place chicken thighs in a large bowl and season/marinate with seasoning of your choice.

Cover the bowl and place in the fridge for around half an hour.

Preheat the oven to 220C/200C Fan/Gas 7. Line a tray and place the chicken on it. Place in the oven for around 25 minutes or until cooked.

While waiting for your chicken to cook, prep your toppings (lettuce, avocado & sour cream) and place them into bowls ready for serving. Alternatively, mix and match ingredients from your fridge and serve with your mini wraps.

Once the chicken is cooked, heat up the mini wraps and then serve.
