Ingredients
 300 g Penne/Pasta of your choice
 2 tsp Olive Oil
 2 Peppers
 3 Large garlic cloves, finely grated
 500 g Carton passata
 1 tbsp Smoked paprika (Optional)
 400 g Chicken breasts ( 2 large) cut into chunks
 20 g Finely grated mature cheddar
Method
1

Cook the pasta in a saucepan of hot water and drain when pasta is cooked but keep the pasta water.

Heat the oven to 180C/160C fan/gas 4.

Put 2 tsp of oil in large pan and heat over a medium heat.

Then chop the peppers and add them in frying for around 8 mins or until they start to soften.

Add the garlic and stir for a few minutes.

After this, tip in the passata and stir in the smoked paprika.

Allow to simmer for 3-4 mins.

Then tip the pasta into the pan along with the chicken and a small cupful of pasta water and stir together.

Place into a baking dish and top with cheese of your choice.

Bake for around 30 minutes and serve.
