Pancake Batter
 300 g Self-raising Flour
 2 Eggs
 1 tbsp Caster Sugar
 300 ml Milk
 1 tsp Vanilla Extract
 1 tsp Baking Powder
Toppings Ideas
 Lemon & Sugar
 Maple Syrup
 Nutella
 Berries
 Banana

Mix the flour, baking powder and sugar into a large bowl and add a small pinch of salt.

In another bowl add the eggs and whisk until smooth. Add the vanilla extract and milk while whisking.

Heat a splash of oil and a small knob of butter in a non-stick frying pan until sizzling.

Add spoonfuls of batter to make pancakes the size you like, big or small depending on your preference.

Allow the pancakes to cook on one side until you see bubbles then flip with a spatula or if you are skilled by flipping the pancake up in the air and cook the other side.

They are best eaten straight away or keep warm in a low oven while you cook another batch. Serve pancakes with the additional toppings on your choice.
